Catfish fillets
Salt
Pepper
Slap Ya Mama Cajun seasoning
Equal parts of self-rising flour and yellow cornmeal
Deep fryer
Hot sauce
Season the fillets on both sides with salt, pepper and Cajun seasoning. Preheat the fryer to 355 degrees and let the fillets sit while the fryer heats up.
Whisk the flour and cornmeal together in a deep pie plate until well blended. Dip the catfish fillets in the mixture until well coated, shake off any excess and set aside. Once the oil is heated up, drop the fillets into the fryer with the basket lowered, but only a few at a time so as not to overcrowd them. Fry for about 4 minutes, or until fish floats and is golden brown. Drain on several layers of paper towels before transferring to a platter or individual plates. Serve with hot sauce at the table for sprinkling on the fillets.
Can also use a cast iron skillet and enough canola oil to pretty much cover the fillets.
