Husband Pleasin' Ranch Style Beans

1 pound package of dried pinto beans
8 cups of water
1 medium onion, chopped
1/2 of a medium green bell pepper, chopped
2 cloves of garlic, chopped
2 teaspoons Worcestershire sauce
1 tablespoon chili powder
2 teaspoons of kosher salt
1/4 teaspoon dry mustard
20 turns of the pepper grinder
1 (10 ounce) can of Rotel tomatoes (or regular diced tomatoes)

Place beans in a dutch oven and cover with water plus about an inch. Bring to a boil and boil for about 1 minute, cover, remove from the heat and set aside for 1 hour.

Drain the beans, return to the pot and add 8 cups of fresh water. Bring to a boil, reduce heat to simmer, cover and simmer for 1 hour or until tender. Add all of the remaining ingredients except for the tomatoes and simmer for 30 minutes. Add the tomatoes and simmer another 30 minutes. Taste and adjust seasonings.

Serve alone, as a side dish or over hot, cooked rice.
