3 medium sized cucumbers
Couple pinches of kosher salt
1 small white onion
6 turns of the pepper grinder
1 cup of apple cider vinegar
3/4 cup of sugar
Dash of crushed red pepper flakes
Couple of dashes of dried basil
Couple of dashes of dried parsley
Peel the cucumbers and slice into very thin rounds. Sprinkle with salt and let stand for at least 30 minutes. This will draw moisture out of the cucumbers. Drain the cucumbers, place into a clean kitchen towel and squeeze all of the excess liquid out. Place the cucumbers into a glass bowl.
Cut the onion in half and slice each half into very thin slices. Add to the cucumbers, add pepper and toss.
Bring the vinegar and sugar to a boil until sugar is dissolved. Whisk in the pepper flakes, basil and parsley and pour the hot sugar mixture directly over the cucumbers and onion; stir. Allow to marinate in the fridge or at room temperature for at least an hour before serving.
