Equal parts self rising flour and bread crumbs (panko would be fantastic!)
1/2 teaspoon Slap Ya Mama Cajun seasoning (or your favorite brand)
Couple dashes of parsley flakes, or chopped fresh parsley
2 tablespoons of bacon fat or a combination of butter and oil
Leftover mashed potatoes
Couple dashes of garlic powder
Couple dashed of onion powder
Salt and pepper, as needed
1 egg, beaten
Combine the flour, bread crumbs, Cajun seasoning and parsley flakes in a flat pie plate or pan. Set aside.
Heat the bacon fat or butter and oil in a non-stick skillet over medium high heat.
Meanwhile, combine the leftover mashed potatoes with garlic and onion powder or other favorite seasonings. Taste, add salt and pepper, and adjust seasonings as needed. Add the egg and mix well. Grab a handful of the potatoes and squish the potatoes together to form a tight ball. Flatten down and shape into a patty.
Dredge the patties in the flour and bread crumb mixture until lightly coated. Patties should not crumble! Carefully place into the hot oil and cook until nicely browned on both sides. Serve hot with a light drizzle of melted butter.
